I don't know about you, but sometimes I just don't feel like cooking a meal during the week. I mean, don't get me wrong, I LOVE to cook. It's one of my greatest passions. But working a full time job often means having a million things to do when I get home from work. Sometimes fitting in cooking, and cleaning the massive amount of dishes that comes with cooking, just doesn't fit in. And I imagine that if I had kids, this would amplify the feeling of not having time to cook. I'm sure some of you awesome mom's out there can attest to that! :)
What I have compiled today is a listing of 3 of my favorite casserole type recipes that I make on a pretty regular basis. One is a breakfast casserole and the other two are Mexican type casseroles. Who doesn't love Mexican food?! These recipes are great for feeding a couple for a few days or a small family for a couple of days.
The first recipe is a Breakfast Egg Bake Casserole. This recipe is great for lunch or brunch. I like to make it on Sundays because then I have a quick, easy breakfast for a few days during the week. I just put the a serving of the leftovers in a container, take it to work with me and pop it in the microwave for a minute or two. If you're a stay at home mom, easy breakfast for you and the kids in the mornings!
The second recipe that I would like to share with all of you is a Chicken Enchilada Casserole. This makes a great dinner that will feed a small family for a couple of meals or feed a couple for a few days! It's also great for packing lunches for the working adults of the family - just put a serving of the leftovers in a container, bring it to work and when it's lunch time, all you have to do is heat it up! If you're not into spicier foods, just leave out the jalapenos.
The final recipe that I would like to share with you is a favorite in my household: Taco Lasagna. This recipe just screams "I'm delicious; eat me." And it tastes even better next day. All of the wonderful flavors have time to mingle. This recipe is great for dinner or lunch and will feed a small family for a day or two or a couple for a few days (my boyfriend and I had it for dinner for three nights.)
