Lindsay is one of my best bloggy friends and I'm thrilled to be here
today sharing my all time favorite post. On my blog you'll find craft and DIY project tutorials, creative recipes, and fun activities to do with kids.
You'll also find that I have a huge sweet tooth so I'm constantly baking and creating new desserts. One of my favorites is ice cream cupcakes. I made these earlier
this year, right before St. Patrick's Day and they were a huge hit in
our household! We have since experimented with different cake and ice
cream combos. My favorite is chocolate cake with Oreo ice cream, but Rocky Road is a close second. ;)
To make your own you will need your favorite cake mix, ice cream, and cupcake liners.
I
found using one tablespoon of batter worked the best. If you like more
cake than ice cream, increase the batter by a teaspoon. Bake for about
10-12 minutess, depending on your oven settings. Once the cupcakes have
cooled, press softened ice cream on top and freeze until completely
hardened. You can add frosting or whipped topping or leave them plain which are just as great.
