Today we are going to be sharing one of our family's favorite breakfast dishes:
Slow Cooker Breakfast Casserole.
This dish would be perfect for an Easter brunch on Sunday, or it even makes a quick and easy dinner on a busy night!
Crock Pot Breakfast Casserole Slow Cooker Breakfast Casserole.
This dish would be perfect for an Easter brunch on Sunday, or it even makes a quick and easy dinner on a busy night!
Recipe adapted from Get Crocked
Ingredients:
1 lb ham, cooked and diced
1 onion, diced
1 green bell pepper, diced
1 (16 oz.) package hash browns, frozen
1 cup Colby Jack cheese, shredded (any kind of cheese would work)
9 eggs
½ cup milk
Green onions (Optional)
Salt & Pepper to taste
Directions:
Spray slow cooker with non-stick cooking spray or use a crock pot liner.
Layer ingredients starting with frozen hash browns followed by meat, onions, peppers, and cheese.
Repeat layer twice and top with scallions.
Beat the eggs, milk, salt & pepper together.
Pour over the layered ingredients in the crock pot (ensure everything gets moistened well).
Cover slow cooker with lid. Cook on low for 7 hours.

I really need to utilize my crockpot more--such a great invention for a busy Mom! Great guest post and this recipe sounds like a great idea for Easter breakfast
