Pumpkin {muffins}


Finally, fall is upon us. You can feel it in the air--it's my most favorite time of the year.

I came across this recipe from
A Few Shortcuts, and knew it was the perfect thing to make.


Pumpkin Cupcakes--

Recipe courtesy of A Few Shortcuts
Serves: 24 cupcakes

Ingredients
1 cup granulated sugar
1 cup brown sugar
1 cup vegetable or canola oil
3 eggs
3 cups all-purpose flour

2 Tsp. baking soda
2 1/2 Tsp. Pumpkin Pie Spice
1/2 tsp salt
1 package instant vanilla pudding mix
1 can (15 ounces) pumpkin puree

Glaze
2 cups powdered sugar
1/2 tsp cinnamon
2-4 Tbsp. Milk

Directions

Preheat Oven to 350 degrees F


In a large bowl, combine sugar and oil until blended. Add eggs, one at a time, beating well after each addition.


In a separate bowl, combine flour, baking soda, Pumpkin pie spice, salt and pudding mix.

Add flour mix to egg mixture alternately with pumpkin, beating well after each addition

Fill lined cupcake pan 3/4 full and Bake at 350 degrees for 25-30 minutes or until toothpick inserted near the center comes out clean.

Remove from pan and cool completely.

Glaze
  1. Whisk together powdered sugar, cinnamon and add 1 tbsp of milk at a time until desired consistency.
  2. Dip warm cupcakes into glaze to coat. (I put it in a Ziploc bag, clipped one corner & drizzled over cupcakes)

If that doesn't get you into the 'fall' spirit, I don't know what will. :)
